Our bone-in pork chops are cut from the midsection of our woodland pasture-raised hogs. Each chop consists of well marbled meat with a medium fat cap attached to a small piece of rib bone. Leaving the chop on the bone adds additional flavor and helps the meat cook evenly.
Our hogs eat a diet of non-GMO feed in addition to roaming and rooting through the woods eating seeds and nuts. As a result, the pork has an unmatched nutty flavor that isn’t found in conventional pork.
For best results, cook the chops hot and fast to develop a crisp exterior and tender interior. We like to season them simply with salt and pepper then cook them on the grill or in a cast iron skillet over medium high heat.
