The brisket is a large muscle found in the chuck, or forequarter, of the steer. Consisting of layers of rich meat and beautiful yellow fat, this cut comes from a heavily used muscle and will be tough unless cooked properly.

Brisket needs a low and slow cook to give the meat and fat time to melt together. We recommend cooking it in the smoker or using it to make a delicious beef stew or pot roast in the slow cooker.
